The Rhumerie de Chamarel relies on sustainable agriculture and uses only freshly pressed sugarcane juice from its own vineyards. All rums are distilled in a modern column still and then aged in carefully selected oak barrels. This is how the Chamarel Aged VS, for example, is created: a rum aged for 3–4 years in American oak, which is particularly aromatic thanks to the addition of a portion of new barrels. The Chamarel Gold matures for 18 months in oak barrels and also serves as the base for the Exotic Spices, which is further refined with natural spices – by infusion in oak barrels for at least three months.
