Snack Time Just Got Better: Try These Crispy Eggplant Croquettes!

📝 Ingredients:
- 500 g of eggplants
- 500 g tomato sauce
- 2 slices of bread
- 30 g cheese (such as provola)
- 1 egg
- Breadcrumbs as needed
- 3 tablespoons grated Parmesan cheese
- Fresh basil as needed
- Filippo Berio Extra Virgin Olive Oil
- Salt
🍳Preparation:
1.Cut the eggplants into cubes and steam them for 10-15 minutes.

2.Dry them with paper towels and transfer them to a large bowl.

3.Add salt, grated cheese, crumbled bread, egg and torn basil leaves.

4.Form walnut-sized croquettes, cover them with breadcrumbs and insert a small piece of cheese inside each one.

5.In a frying pan, heat Filippo Berio Extra Virgin Olive Oil and add the tomato sauce.

6.Cook for 5 minutes, then add basil and croquettes directly into the sauce.

7.After 5 minutes, carefully turn the croquettes over and cook for another 5 minutes over low heat.
