The Vinologist’s journey to discover single-origin Cabernet Sauvignon leads him towards Stellenbosch. Cabernet Sauvignon flourishes amongst the variety of altitudes, aspects and soils of the mountains surrounding Stellenbosch. Stellenbosch’s climate is warm but well-moderated by cool winds from False Bay which are funnelled by the mountains into the valleys, extending the ripening period. The winemaking and barrel ageing are minimal to produce wine, which is most representative of Stellenbosch. This deﬁnitive Stellenbosch Cabernet Sauvignon displays varietal typicity with fruit richness and finesse while staying true to its origin.
The nose is exceptionally perfumed, showing an abundance of violets, dark plums, black cherries and currants with whiffs of sweet tobacco, baking spices and cigar box. Dark berry fruit dominates a smooth, medium-bodied palate with flavours of black currant, red plums, black olives and notes of bramble, star anise and tobacco leaf. The mid-palate is vivid, focused and elegant, showing fine-grained, lithe tannins and integrated acidity. Graphite, cloves, black cardamom and hints of dark chocolate and sage linger on a fine finish.
